It’s Thanksgiving and this year we are going to be cooking the giblets. Turkey Giblets are usually in a bag inside of a raw turkey. It includes the heart, liver, gizzard, and neck. In our preparation, we used everything except the neck.
1/2 small onion
1 clove of garlic
2 tablespoons of minced ginger
2 chill peppers
1 or 2 lemongrass stalks
2 tablespoons of cooking oil
Salt and pepper to taste
1 bag of Turkey Giblets
1. Combine the garlic, ginger, lemongrass and chili together and crush with a mortar and pestle. You can use a food processor if you don’t have a mortar and pestle.
2. Dice the onion and begin to saute the onion first for 2 minutes in oil on medium-high heat.
3. Add the garlic, ginger, lemongrass, chili from step 1 and continue cooking until light brown, about 5 minutes.
4. Add the Turkey Giblets and cook until they are brown and fully cooked inside. Add salt and pepper to taste.
Of course, we are also going to be making all the rest of the turkey and other great Thanksgiving food too.
